Hilary’s Favorite Pizza Recipe

 
 

Scrumptious Vegetarian Pizza with Pumpkin Sauce

I love this recipe! Such a nice change to use pumpkin sauce instead of tomato. ~ Hilary Brown

Ingredients

– Pumpkin blocks (300 grams for 3 people)
– Cooking cream (300 grams for 3 people)
– Red Onion (2-3 onions)
– Feta (100 grams)
– Fresh Thyme (1,5 teaspoons)
– Pumpkin Pits (15 grams)
– Some kind of pizza dough or bread (Enough for 3~!)
– A bit of butter
– Some balsamic Vinegar & Olive Oil
– Arugula (Rucola)

Instructions

  • Warm oven to 200 degrees.

  • Heat up the butter in a pan, and saute your pumpkin blocks for 5 minutes.

  • Then add in the cream and add some salt and pepper and cook on low for 7-10 minutes.

  • Mix with a staaf mixer until creamy.

  • Cut the onion and crumble the feta.

  • Bake the pizza crust om top of baking paper for +/- 10 min until a bit crisp on the edges.

  • Spread evenly your sauce over the bottom and sprinkle with the thyme .

  • Place the feta and the onions over the pizzas, add salt and pepper as needed.

  • Bake for 10 more minutes

  • Roast on the stove top your pumpkin pits and once pizza is out of oven, sprinkle over the top.

  • Make a salad of Arugula (Rucola), dark balsamic vinegar and olive oil, salt & pepper and serve
